Googled mango salsa recipe and didnt like any recipes I found, plus didn't have same ingredients....SO I made my own version {using what ingredients i had} cilantro, mint, scallions...etc These are just like staples, and boy you can make just about anything good with some fresh herbs!! And I love them because they are so interchangeable in many recipes. If you dont have that particular one a recipe calls for, you can usually substitute and the flavor is just as good. {usually} So, here's my recipe according to what I had, and I think it turned out good b/c i also used flavors i like : )
My Minty Mango Salsa:
Ingredients:
1 large very ripe mango diced
2 scallions, diced. {white and half of green part}
1 large handful of fresh cilantro chopped
3-4 sprigs of fresh mint chopped *** Key ingredient ~ makes all the difference
1 teaspoon extra virgin olive oil
S & P to taste { I like a lot}
* I would have used a half of a jalapeno too if I had one, but i didnt. Just as good though I think. Would have done that for Josh.
* You also could add a red pepper for color, but i find this really didnt lack anything, so you dont really need it.
All you do is chop everything up, and toss with fork just until mixed, then serve in a pretty bowl. Depending on your size of mango, this recipe does not make much, so i would double next time.
You must serve with quality tortillas and a ice cold whatever you like. If there's one thing I've learned having a husband who loves mexican food as much as mine, it's that you dont cheap on the chips. You will love it on a hot day! Tonight we are using it on our grilled chicken. simple, fresh, easy. There's dinner. DONE!
